Citrus Shrimp Salad with Louis Sauce Dressing

Ingredients
  

  • Salad greens of your choice
  • 2 lbs. shrimp, peeled and deveined
  • Milk for soaking the fish
  • For the Boil
  • 2 lemons, halved
  • 2 limes, halved
  • 1/2 orange, halved
  • 1 Tbsp. red pepper flakes
  • 4 cups water
  • 2 Tbsp. salt
  • For the Marinade
  • 2 cups orange juice
  • 2 cups grapefruit juice
  • 2 cups pineapple juice
  • 1/2 cup lemon juice
  • 1/2 cup lime juice
  • 1 lemon sliced
  • 1 orange sliced
  • 1 grapefruit, sliced
  • 1 tsp. red pepper flakes
  • For the Louis Sauce Dressing
  • 1 cup chili sauce
  • 2 cups mayonnaise
  • 2 Tbsp. onion, grated
  • 2 Tbsp. lemon zest
  • 3 Tbsp. lemon juice
  • 1 Tbsp. horseradish
  • 1-1/2 tsp. Worcestershire
  • 1/4 tsp. cayenne
  • 1/2 tsp. hot sauce
  • 1 tsp. cajun seasoning

Instructions
 

  • Soak the shrimp in milk for 30 minutes to eliminate any fishy odor or taste. Drain and rinse well.
  • In a large pot or Dutch oven, combine the water, lemon halves, orange halves, lime halves, red pepper flakes and salt.
  • Boil for about 5 minutes.
  • While the citrus water is coming to temperature, prepare a bowl of ice water and set it aside.
  • Add the shrimp to the boiling citrus water and allow it to soak for about 3 minutes.
  • Remove the shrimp with a slotted spoon and immediately plunge them into the ice bath to stop the cooking. Drain the shrimp when they are cool.
  • In a resealable bag, combine the orange juice, grapefruit juice, pineapple juice, lemon juice, lime juice, sliced lemon, sliced lime, sliced orange, sliced grapefruit and red pepper flakes.
  • Add the shrimp to the bag and marinate for at least 25 minutes.
  • While the shrimp is marinating, prepare the dressing. Add all the dressing ingredients to a bowl and mix well.
  • Chill until ready to dress the salad.
  • To make the salad, add some greens to a bowl. You can use any kind of salad greens. You can also add any extra vegetables to the salad, such as tomatoes, green onion, radishes, green pepper, etc.
  • Top the greens with the shrimp and drizzle the Louis Sauce Dressing on top. The shrimp has a nice citrus flavor from all the marinade and boil.
