Ingredients

onion, chopped
2
celery ribs, chopped
3
cloves garlic, minced

green pepper, chopped

extra virgin olive oil

lbs.
shrimp, peeled and deveined

can
diced tomatoes

Tbsp.
Carbquick
1
Tbsp.
Cajun seasoning
Salt and pepper to taste

frozen cauliflower rice or 2 cups cooked rice
Instructions
Soak shrimp in milk for at least 30 minutes to remove any fishy odor or taste.
Heat the oil in a skillet and saute the onion, celery, peppers and garlic until softened.
Sprinkle the top of the vegetables with the Carbquik and stir.
Add the tomatoes, Cajun seasoning, salt, pepper and bay leaf.
Cook for about 15 minutes on medium-low.
Add the Creole seasoning, bay leaf, salt and pepper
Add the shrimp and cook until no longer pink.
Serve over cauliflower rice or regular rice.
