Slow Cooker Steak Fajitas

Flank steak always comes out tender and juicy in the slow cooker. The flavorful spices infuse the beef with a wonderful flavor that can't be beaten! Place the beef in the crock pot or instant pot before you leave for work. When you get home, add the vegetables and cook for another hour while you unwind from the day. Slice the beef and stuff it in a warm tortilla with all the toppings.

Equipment

  • 1 knife
  • 1 cutting board
  • Instant pot or crock pot

Ingredients
  

  • 1 yellow onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 jalapeno, sliced
  • 1-1/2 lbs. flank steak
  • 2 Tbsp. fajita seasonig or 1 tsp. each of cumin, chili powder and ground coriander
  • 4 garlic cloves, minced
  • 1 lime, juiced
  • For serving: Salsa, low carb tortillas, fresh chopped cilantro, Cotija cheese

Instructions
 

  • Coat the flank steak with the fajita seasoning and rub it into the meat.
  • Place the flank steak in the slow cooker or InstantPot with the garlic. Set the slow cooker on high for 3 hours or on low for 6 hours.
  • Remove the flank steak and allow it to rest for 10 minutes.
  • Slice the flank steak on the bias and place it back in the slow cooker.
  • Add the vegetables on top of the meat. Slow cook for 1 more hour.
  • Build fajitas with the meat, vegetables and desired toppings.
