Italian Meatloaf
Meatloaf is a classic American comfort food, but sometimes it’s fun to put a new spin on an old favorite. This Italian-style meatloaf brings bold, delicious flavor to the table, complemented by a savory red sauce and a sprinkle of Parmesan cheese on top.

1 large baking dish
- 2 Tbsp. extra virgin olive oil
- 1 red pepper diced
- 1 onion diced
- 2 tsp. chopped garlic
- 1 lb. ground beef
- 2 eggs
- 1/4 cup breadcrumbs I made Keto breadcrumbs
- 1 cup Parmesan plus extra for garnish
- 1 Tbsp. Worcestershire
- 1 Tbsp. balsamic vinegar
- 1/4 cup basil chopped
- 1/4 cup parsley chopped
- 2 tsp. salt
- 1/2 tsp. pepper
- 1 cup marinara sauce
Preheat oven to 350 degrees.
Heat olive oil in a saucepan.
Saute peppers, onions and garlic until soft.
Remove to a plate and allow to cool.
In a large bowl, combine the remaining ingredients, except for the sauce.
Add the vegetables and mix well.
Pack the meat mixture into a loaf pan.
Invert the meatloaf into a greased baking dish.
Top with the marinara sauce.
Bake for 50-60 minutes, or until a meat thermometer registers 160°F.
Remove the dish from the oven and allow it to rest for 5-10 minutes.
Sprinkle with Parmesan cheese and slice to serve.
