Italian Meatloaf

Meatloaf is a classic American comfort food, but sometimes it’s fun to put a new spin on an old favorite. This Italian-style meatloaf brings bold, delicious flavor to the table, complemented by a savory red sauce and a sprinkle of Parmesan cheese on top.

  • 1 saucepan
  • 1 large spoon or spatula
  • 1 plate
  • 1 large bowl
  • 1 loaf pan
  • 1 large baking dish

Ingredients
  

  • 2 Tbsp. extra virgin olive oil
  • 1 red pepper diced
  • 1 onion diced
  • 2 tsp. chopped garlic
  • 1 lb. ground beef
  • 2 eggs
  • 1/4 cup breadcrumbs I made Keto breadcrumbs
  • 1 cup Parmesan plus extra for garnish
  • 1 Tbsp. Worcestershire
  • 1 Tbsp. balsamic vinegar
  • 1/4 cup basil chopped
  • 1/4 cup parsley chopped
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1 cup marinara sauce

Instructions
 

  • Preheat oven to 350 degrees.
  • Heat olive oil in a saucepan.
  • Saute peppers, onions and garlic until soft.
  • Remove to a plate and allow to cool.
  • In a large bowl, combine the remaining ingredients, except for the sauce.
  • Add the vegetables and mix well.
  • Pack the meat mixture into a loaf pan.
  • Invert the meatloaf into a greased baking dish.
  • Top with the marinara sauce.
  • Bake for 50-60 minutes, or until a meat thermometer registers 160°F.
  • Remove the dish from the oven and allow it to rest for 5-10 minutes.
  • Sprinkle with Parmesan cheese and slice to serve.
