In a bowl, mix all the sweet-and-spicy mayonnaise ingredients.
Chill until ready for serving.
In a large bowl, season the chicken with poultry seasoning, Tabasco, a little Cajun seasoning, salt and pepper.
Pour buttermilk over the chicken until it is covered.
Marinate the chicken overnight.
After marinating, prepare a mixture of Carbquick, cornstarch, garlic powder, minced onion flakes, smoked paprika, Italian seasoning, and cayenne.
Dredge the chicken in the coating mixture and press it into the chicken.
Lay the chicken cutlets on a baking sheet until all the chicken is coated.
Heat avocado oil until hot.
Fry the chicken on both sides until golden.
Watch it closely to make sure the coating doesn't burn. Carbquick fries dark quickly. That is why the chicken must be pounded thin, so it cooks just as quickly.
Drain the fried chicken on a wire rack.
To serve, place a slice of provolone on top of the chicken.
Add lettuce, tomato and crispy bacon.
Don't forget the sweet-and-spicy mayo to finish.
