Lemon Breakfast Parfaits

A creamy blend of sour cream and plain yogurt is lightly sweetened with honey and infused with fragrant lemon zest, creating a smooth, lightly tangy base that feels both indulgent and refreshing.

Equipment

  • 1 measuring cup
  • Measuring spoons
  • 1 paring knife
  • 1 medium bowl
  • 1 medium spoon
  • 1 Small bowl
  • 1 zester
  • 4 parfait glasses or other containers

Ingredients
  

  • 1/2 cup sour cream
  • 1/2 cup lemon yogurt or plain yogurt mixed with 1/8 tsp. lemon extract
  • 1 Tbsp. honey
  • 1/2 tsp. lemon zest
  • 1 cup kiwi fruit sliced and quartered
  • 1 cup mixed berries any variation of strawberries, raspberries, blueberries or blackberries
  • 1 Container TruWhip Keto Whipped Topping
  • Toppings: Chopped crystallized ginger Keto granola, chopped mint
  • Lemon slices for garnish

Instructions
 

  • Combine sour cream and lemon yogurt. If No Sugar lemon yogurt is not available to you, it is easy to make your own by using plain yogurt and 1/8 teaspoon of lemon extract.
  • Stir in the honey and lemon zest.
  • In a bowl, combine the kiwi, blueberries and raspberries.
  • Spoon 1/4 cup of the fruit into some parfait or pretty glasses.
  • Layer with granola and more yogurt.
  • Top with a dollop of Keto whipped topping and sprinkle with chopped crystallized ginger, chopped mint or more granola.
  • Finish with a slice of lemon perched on the side of the glass.
