Lemon Breakfast Parfaits
A creamy blend of sour cream and plain yogurt is lightly sweetened with honey and infused with fragrant lemon zest, creating a smooth, lightly tangy base that feels both indulgent and refreshing.

- 1/2 cup sour cream
- 1/2 cup lemon yogurt or plain yogurt mixed with 1/8 tsp. lemon extract
- 1 Tbsp. honey
- 1/2 tsp. lemon zest
- 1 cup kiwi fruit sliced and quartered
- 1 cup mixed berries any variation of strawberries, raspberries, blueberries or blackberries
- 1 Container TruWhip Keto Whipped Topping
- Toppings: Chopped crystallized ginger Keto granola, chopped mint
- Lemon slices for garnish
Combine sour cream and lemon yogurt. If No Sugar lemon yogurt is not available to you, it is easy to make your own by using plain yogurt and 1/8 teaspoon of lemon extract.
Stir in the honey and lemon zest.
In a bowl, combine the kiwi, blueberries and raspberries.
Spoon 1/4 cup of the fruit into some parfait or pretty glasses.
Layer with granola and more yogurt.
Top with a dollop of Keto whipped topping and sprinkle with chopped crystallized ginger, chopped mint or more granola.
Finish with a slice of lemon perched on the side of the glass.
