  • 1 knife
  • 1 Small bowl

  • 3 pie plates or shallow dishes
  • Air Fryer
  • Air fryer liners

Ingredients
  

  • 1 tsp. each salt and pepper
  • 1 Tbsp. Italian seasoning
  • 1 tsp. garlic powder
  • 3 zucchini sliced
  • 1 Tbsp. extra virgin olive oil
  • 1/2 cup Carbquik
  • 2 large eggs slightly beaten
  • 1/2 cup shredded Parmesan

Instructions
 

  • In a small bowl, mix the salt, pepper, Italian seasoning and garlic powder.
  • Place zucchini slices in a bowl. Drizzle with olive oil.
  • Sprinkle the zucchini with the seasoning blend and toss to coat.
  • Set up a breading station using three pie plates or shallow dishes. In one, add the Carbquik. In another, add the eggs. In a third dish, add the shredded parmesan.
  • Dust the slices of zucchini with Carbquik, then dip in the egg.
  • Coat the slices with shredded parmesan and place in the air fryer, lined with a parchment paper liner.
  • Set the air fryer to 400 degrees and cook for five minutes, working in batches..
  • Turn the zucchini over and cook for another 5 minutes. Repeat with remaining zucchini.
  • Serve hot with some ranch dressing for dipping.
