These Air-Fried Zucchini Parmesan Chips bake up irresistibly crispy as the parmesan melts and turns golden, creating a keto-friendly side dish bursting with flavor. Ingredients
1 tsp. each salt and pepper
1 Tbsp. Italian seasoning
1 tsp. garlic powder
3 zucchini, sliced
1 Tbsp. extra virgin olive oil
1/2 cup Carbquik
2 large eggs, slightly beaten
1/2 cup shredded Parmesan
Instructions
In a small bowl, mix the salt, pepper, Italian seasoning and garlic powder.



Place zucchini slices in a bowl. Drizzle with olive oil.

Sprinkle the zucchini with the seasoning blend and toss to coat.

Set up a breading station using three pie plates or shallow dishes. In one, add the Carbquik. In another, add the eggs. In a third dish, add the shredded parmesan.

Dust the slices of zucchini with Carbquik; then, dip in the egg. Coat the slices with shredded Parmesan and place them in the air fryer, lined with parchment paper. Set the air fryer to 400 degrees and cook for five minutes. Turn the zucchini over and cook for another 5 minutes. Work in batches until all the zucchini chips are done.

Serve hot with some ranch dressing for dipping.
