Baked Brie with Blueberry Ginger Chutney

Serve this Keto-friendly appetizer fo guests or as an everyday snack. The buttery brie pairs well with the spicy sweet blueberry ginger chutney.

Equipment

  • 1 small saucepan
  • 1 Large spoon
  • 1 baking sheet
  • Cooking Spray
  • 1 knife

Ingredients
  

  • 1 cup fresh blueberries
  • 1/4 cup brown sugar Swerve
  • 1-1/2 Tbsp. cornstarch
  • 2 Tbsp. cider vinegar
  • 2 Tbsp. onion, chopped
  • 2 tsp. ginger paste
  • 1 cinnamon stick
  • 1/8 tsp. salt
  • 1 8-oz. wheel of brie
  • Keto crackers, veggie dippers or Low carb pita chips or tortilla chips

Instructions
 

  • In a saucepan, combine all the ingredients except the brie.
  • Cook and stir until the mixture comes to a boil.
  • Turn off the heat and allow to cool for 10 minutes.
  • Remove the cinnamon stick.
  • Cover and chill for one hour.
  • Meanwhile, place the brie wheel on a greased baking sheet.
  • Bake at 350 degrees for 8-10 minutes or until soft.
  • Transfer to a serving plate and top with chilled topping.
  • Serve with Keto crackers or veggie dippers.
