Baked Brie with Blueberry Ginger Chutney

Baked Brie is irresistible—rich, buttery, and perfectly gooey—and this Blueberry-Ginger Chutney takes it to the next level. Bursting with sweet blueberries (one of the few Keto-friendly fruits) and a warm hint of ginger, the topping comes together with simple pantry staples and frozen berries. Serve the creamy Brie straight from the oven with low-carb crackers and a glass of wine for an effortlessly elegant appetizer that feels like a special evening all on its own.

Ingredients

1 cup fresh blueberries

1/4 cup brown sugar Swerve

1-1/2 Tbsp. cornstarch

2 Tbsp. cider vinegar

2 Tbsp. onion, chopped

2 tsp. ginger paste

1 cinnamon stick

1/8 tsp. salt

1 8-oz. wheel of brie

Keto crackers

Instructions

In a saucepan, combine all the ingredients except the brie. Cook and stir until the mixture comes to a boil. Turn off the heat and allow to cool for 10 minutes. Remove the cinnamon stick. Cover and chill for one hour.

Meanwhile, place the brie wheel on a baking sheet. Bake at 350 degrees for 8-10 minutes or until soft. Transfer to a serving plate and top with chilled topping.

Serve with Keto crackers, tortilla chips or veggie dippers.
