I have been on a Brie kick lately. Once you get on that train, it’s hard to get off it because Brie is so buttery and wonderfully gooey. When topped with some kind of topping and paired with some Keto crackers (and don’t forget a glass of wine), you have the beginnings of a perfect evening. I came up with this Blueberry Ginger Chutney with items I had on hand. Blueberries are one of the only fruits allowed on a Keto diet, so when I see them on sale I buy a bunch and freeze them. I took advantage of some of my frozen berries for this recipe and kept adding ingredients until I had the flavor and consistency I was looking for. It is a perfect topping for warm, gooey, buttery brie! Now all I need is a sunset!
Ingredients
1 cup fresh blueberries
1/4 cup brown sugar Swerve
1-1/2 Tbsp. cornstarch
2 Tbsp. cider vinegar
2 Tbsp. onion, chopped
2 tsp.. ginger paste
1 cinnamon stick
1/8 tsp. salt
1 8-oz. wheel of brie
Keto crackers
Instructions
In a saucepan, combine all the ingredients except the brie. Cook and stir until the mixture comes to a boil. Turn off the heat and allow to cool for 10 minutes. Remove the cinnamon stick. Cover and chill for one hour.
Meanwhile, place the brie wheel on a baking sheet. Bake at 350 degrees for 8-10 minutes or until soft. Transfer to a serving plate and top with chilled topping.
Serve with Keto crackers or veggie dippers.
