Baked Zucchini

1 Small bowl
- 2 large zucchini, sliced
- 1 tsp. extra virgin olive oil + 1 Tbsp.
- Salt and pepper to taste
- Paprika
- 1/2 cup Keto breadcrumbs or other breadcrumbs
- 1/2 cup grated Parmesan cheese
- 8 sprigs fresh thyme, stripped from the stem
- 2 garlic cloves, minced
- 1-1/2 tsp. Italian seasoning
- Italian parsley, chopped for garnish
Heat oven to 350 degrees.
Add melted butter to the bottom of an 8x8” pan.
Arrange the zucchini slices in the bottom of the pan.
Sprinkle the zucchini with salt, pepper and minced garlic.
In a bowl, combine the breadcrumbs, Italian seasoning,thyme, salt pepper and Parmesan cheese. Give that a mix.
Add 1 tablespoon of olive oil and stir.
Spoon the topping over the zucchini.
Bake for 20 minutes until the topping is slightly golden.
To serve, garnish with fresh, chopped parsley.
