Sliced zucchini is sprinkled with a crunchy topping in this alternative to a casserole-type dish. This is an easy side dish that goes with sooooooo many things. Not only that, but it is so simple. Like, really really simple!
Ingredients
2 large zucchini, sliced
1 tsp. extra virgin olive oil + 1 Tbsp.
Salt and pepper to taste
Paprika
1/2 cup Keto breadcrumbs or other breadcrumbs
1/2 cup grated Parmesan cheese
8 sprigs fresh thyme, stripped from the stem
2 garlic cloves, minced
1-1/2 tsp. Italian seasoning
Italian parsley, chopped for garnish
Instructions
Heat oven to 350 degrees. Add melted butter to the bottom of an 8×8″ pan. Arrange the zucchini slices in the bottom of the pan. Sprinkle the zucchini with salt, pepper and minced garlic.

In a bowl, combine the breadcrumbs, Italian seasoning, thyme, salt pepper and Parmesan cheese. Give that a mix. Add 1 tablespoon of olive oil and stir.

Spoon the topping over the zucchini. Bake for 20 minutes until the topping is slightly golden.

To serve, garnish with fresh, chopped parsley.
