Breakfast Quiche

This is an easy recipe that you can make ahead. The fathead dough makes a wonderful pie crust to keep it Keto.

Equipment

  • 1 rolling pin or tortilla press
  • 1 whisk
  • 1 measuring cup
  • Measuring spoons
  • 1 knife
  • Parchment paper
  • 1 pie pan
  • 1 baking sheet
  • Toothpicks or skewer

Ingredients
  

  • 1 recipe fathead dough
  • 6 eggs
  • 6 slices bacon, cooked and chopped
  • Salt and pepper to taste
  • 1/2 Tbsp. hot sauce
  • 1/4 cup green onion, sliced
  • 1/2 red pepper, chopped
  • 1 tsp. garlic, minced
  • 1 cup spinach, roughly chopped
  • 1 cup cheddar cheese or pepper jack cheese, shredded
  • 1/2 cup half-and-half or cream

Instructions
 

  • Roll out the fathead dough to make the pie crust. Press the fathead dough into a 9" pie pan. Trim or tuck under the edges. If you have a tortilla press, use it to press the dough into a thinner layer.
  • Bake the pie crust at 350 degrees for 10 minutes.
  • In a large bowl, whisk the eggs.
  • Add the remaining ingredients and stir. Pour the egg mixture into the pie crust.
  • Place the quiche onto a baking sheet to catch any spills.
  • Bake at 350 for 45 minutes or until a toothpick inserted in the center comes out clean.
  • Slice into wedges and serve. This makes a nice breakfast or pair it with a salad for lunch or dinner.
