Cajun Crawfish and Biscuits
Use almond biscuits as the base for this delicious recipe reminiscent of chicken a la king. The topping is loaded with crawfish tail meat, mushrooms and creole flavors. This is a recipe you won't want to miss.

- 1/2 cup butter
- 1 onion chopped
- 1 package of white mushrooms sliced
- 2 cups chicken broth
- 2 tsp. lemon juice
- 1/2 cup Carbquick or other baking mix
- 1 cup cream
- 1/4 tsp. salt
- 1/4 tsp. smoked paprika
- 1/4 tsp. Cajun seasoning
- 2 almond biscuits cut in half
- 1 beef smoked sausages sliced in half-moons
- 1-1/2 cups crawfish tail meat
- Salt and pepper to taste
- 1 cup chicken shredded or
- Tabasco sauce to taste optiona
Melt the butter in a saucepan.
Saute the onion and mushrooms until soft.
Meanwhile, mix the chicken broth and lemon juice in a bowl.
Sprinkle the Carbquick over the top of the onion and stir until thick.
Gradually pour in the chicken broth mixture and stir. Stir in cream
Season with salt, smoked paprika, and Cajun seasoning.
Add the smoked sausage, chicken and crawfish meat. Cook until the sausage, chicken and crawfish are cooked through.
To serve, cut two almond biscuits in half and lay both halves on a plate.
Cover with the filling.
Sprinkle extra cajun seasoning over the top for more flavor and as a garnish.
