Cajun Crawfish and Biscuits

Use almond biscuits as the base for this delicious recipe reminiscent of chicken a la king. The topping is loaded with crawfish tail meat, mushrooms and creole flavors. This is a recipe you won't want to miss.

Equipment

  • 1 measuring cup
  • Measuring spoons
  • 1 knife
  • 1 saucepan
  • 1 medium bowl
  • 1 small spoon
  • 1 Large spoon

Ingredients
  

  • 1/2 cup butter
  • 1 onion chopped
  • 1 package of white mushrooms sliced
  • 2 cups chicken broth
  • 2 tsp. lemon juice
  • 1/2 cup Carbquick or other baking mix
  • 1 cup cream
  • 1/4 tsp. salt
  • 1/4 tsp. smoked paprika
  • 1/4 tsp. Cajun seasoning
  • 2 almond biscuits cut in half
  • 1 beef smoked sausages sliced in half-moons
  • 1-1/2 cups crawfish tail meat
  • Salt and pepper to taste
  • 1 cup chicken shredded or
  • Tabasco sauce to taste optiona

Instructions
 

  • Melt the butter in a saucepan.
  • Saute the onion and mushrooms until soft.
  • Meanwhile, mix the chicken broth and lemon juice in a bowl.
  • Sprinkle the Carbquick over the top of the onion and stir until thick.
  • Gradually pour in the chicken broth mixture and stir. Stir in cream
  • Season with salt, smoked paprika, and Cajun seasoning.
  • Add the smoked sausage, chicken and crawfish meat. Cook until the sausage, chicken and crawfish are cooked through.
  • To serve, cut two almond biscuits in half and lay both halves on a plate.
  • Cover with the filling.
  • Sprinkle extra cajun seasoning over the top for more flavor and as a garnish.
