Cajun Crawfish and Biscuits

Can you say YUM? I definitely can say YUM anytime for these Cajun Crawfish Egg Biscuits! The crawfish-heavy sauce has as much or as little spice as you can handle. Draped over eggs and a homemade biscuit, it’s heaven on a plate. This meal is satisfying for breakfast, lunch, or dinner. It is easy to make and keto-friendly when made with almond flour biscuits. It doesn’t get any better than this!

1/2 cup butter

1 onion, chopped

1 package of white mushrooms, sliced

2 cups chicken broth

2 tsp. lemon juice

1/2 cup Carbquick or other baking mix

1 cup cream

1/4 tsp. salt

1/4 tsp. smoked paprika

1/4 tsp. cajun seasoning

2 almond biscuits, cut in half

1 beef smoked sausages, sliced in half-moons

1-1/2 cups crawfish tail meat

Salt and pepper to taste

1 cup chicken, shredded or

Tabasco sauce to taste (optional

Melt the butter in a saucepan.

Saute the onion and mushrooms until soft.

Meanwhile, mix the chicken broth and lemon juice in a bowl.

Sprinkle the Carbquick over the top of the onion and stir until thick.

Gradually pour in the chicken broth mixture and stir. Stir in cream.

Season with salt, smoked paprika, and cajun seasoning.

Add the smoked sausage, chicken and crawfish meat. Cook until sausage, chicken and crawfish are cooked through.

To serve, cut two almond biscuits in half. Lay both halves on a plate. Cover with the filling. Sprinkle extra cajun seasoning over the top for more flavor and as a garnish. This is so good, I can’t even tell you!
