Carbquik Waffles with Homemade Sugar-Free Maple Syrup

  • Measuring spoons
  • 1 saucepan
  • 2 medium spoons
  • Waffle Maker
  • Cooking Spray
  • Electric mixer
  • 1 rubber spatula

Ingredients
  

  • For the Waffles:
  • 1 egg
  • 1/4 cup heavy cream
  • 1/4 cup water
  • 1-1/4 cup Carbquik
  • 1 tsp. vanilla extract
  • 1 Tbsp. Stevia
  • 1/8 cup oil
  • For the Syrup:
  • 2 cups water
  • 2/3 cup Stevia
  • 1/4 tsp. salt
  • 1 Tbsp. maple extract
  • 1/3 cup brown sugar swerve
  • 1 tsp. xanthum gum
  • 4 Tbsp. butter

Instructions
 

  • To make the syrup, combine all the ingredients in a saucepan except the butter.
  • Stir until everything is dissolved.
  • Heat until steamy.
  • Add the butter and allow to melt.
  • Stir.
  • Turn the heat to low to simmer.
  • Serve the syrup with the waffles either hot or cold. Store in a container in the refrigerator.
  • To make the waffles, spray the waffle maker with cooking spray.
  • In the bowl of a mixer, beat the eggs until yellow and slightly thick.
  • Add the cream and water.
  • Mix on the low setting of the mixer to stir in the liquid.
  • Add the Carbquik and Stevia.
  • Mix on low until smooth.
  • Add the vanilla and mix to combine.
  • Fold in the oil using a rubber spatula.
  • Drop large spoonfuls of batter onto a hot waffle iron.
  • Close the lid and cook for about 5 minutes.
  • Lift the lid and remove the waffle.
  • Repeat with the remaining batter.
