Ingredients
For the Waffles:
1 egg
1/4 cup heavy cream
1/4 cup water
1-1/4 cup Carbquik
1 tsp. vanilla extract
1 Tbsp. Stevia
1/8 cup oil
For the Syrup:
2 cups water
2/3 cup Stevia
1/4 tsp. salt
1 Tbsp. maple extract
1/3 cup brown sugar Swerve
1 tsp. xanthum gum
4 Tbsp. butter
Instructions
To make the syrup, combine all the ingredients in a saucepan except the butter. Stir until everything is dissolved. Heat until steamy. Add the butter and allow it to melt. Stir. Turn the heat to low to simmer. Serve the syrup with the waffles, either hot or cold. Store in a container in the refrigerator.

To make the waffles, spray the waffle maker with cooking spray. In the bowl of a mixer, beat the eggs until yellow and slightly thick.

Add the cream and water. Mix on the low setting of the mixer to stir in the liquid.

Add the Carbquik and Stevia. Mix on low until smooth. Add the vanilla and mix to combine. Fold in the oil using a rubber spatula.

Drop large spoonfuls of batter onto hot waffle iron. Close the lid and cook for about 5 minutes. Lift the lid and remove the waffle. Repeat with the remaining batter.
