Farmer's Market SAlad

Use the recipe as a guideline to make the salad, but you can use any kind of veggies that you find at the farmer's market. The combo below is delicious!

Ingredients
  

  • Salad greens
  • Arugula or spinach
  • 2 Roma tomatoes, sliced
  • ½ cucumber, peeled and sliced6
  • 6 Red radishes, sliced
  • (Optional) 2 carrots, diced (leave these off to keep it Keto friendly)
  • 2 mini bell peppers, stems removed and sliced in half
  • 2 stalks celery, diced
  • Pecans, roughly chopped
  • 1 avocado, pitted and sliced
  • 2 hard-boiled egg, sliced
  • 3 slices bacon, cooked crisp
  • Feta cheese
  • Parmesan cheese
  • Ranch Dressing or your favorite dressing

Instructions
 

  • Add the salad greens and arugula to a bowl. Mix them up a bit.
  • Add the tomatoes, cucumber, radishes, celery, mini peppers and carrots. and pecans. Slice the tomatoes in rounds and place them flat on top of the salad for a pretty presentation.
  • Add the avocado slices and sliced or chopped hard-boiled eggs.
  • Sprinkle with crumbled bacon, feta chees and Parmesan cheese.
  • Top with your favorite dressing and serve
