Use the recipe as a guideline to make the salad, but you can use any kind of veggies that you find at the farmer's market. The combo below is delicious!
(Optional) 2 carrots, diced (leave these off to keep it Keto friendly)
2mini bell peppers, stems removed and sliced in half
2stalkscelery, diced
Pecans, roughly chopped
1avocado, pitted and sliced
2hard-boiled egg, sliced
3slices bacon, cooked crisp
Feta cheese
Parmesan cheese
Ranch Dressing or your favorite dressing
Instructions
Add the salad greens and arugula to a bowl. Mix them up a bit.
Add the tomatoes, cucumber, radishes, celery, mini peppers and carrots. and pecans. Slice the tomatoes in rounds and place them flat on top of the salad for a pretty presentation.
Add the avocado slices and sliced or chopped hard-boiled eggs.
Sprinkle with crumbled bacon, feta chees and Parmesan cheese.
