I love going to a good farmer’s market to pick up fresh produce. Back in the day, a farmer’s market only sold products from some kind of farm, such as fruit, vegetables, cheese, eggs etc. Nowadays, a farmer’s market sells well beyond that with baked goods, crafts, home-based business products and other homemade products. I actually see more of those types of things than fresh produce items. This salad reminds me of a farmer’s market because the ingredients are super fresh like those found at a farmer’s market. If you happen to visit a farmer’s market, you can add whatever other vegetable you might pick up there, such as red onions, green onions, etc. All these crunchy, nutritious veggies will add additional flair to a perfect meal.
Ingredients
Salad greens
Arugula
2 Roma tomatoes, sliced
1/2 cucumber, peeled and sliced
6 red radishes, sliced
(Optional) 2 carrots, diced (leave these off to keep it Keto friendly)
2 mini bell peppers, stems removed and peppers sliced in half.
2 stalks celery – diced
Pecans, roughly chopped
1 avocado, pitted and sliced
2 hard-boiled eggs, sliced
3 slices bacon, cooked crisp
Feta cheese
Parmesan cheese
Ranch Dressing or your favorite dressing
Instructions
You can make this salad in a big bowl to feed many people, or you can make this salad in individual bowls. I have done both, but on this day, I made the salad in individual bowls. First thing, add the salad greens and arugula to the bowl. Mix it up a bit.
Add the tomatoes, cucumber, radishes, celery, mini peppers and carrots. and pecans. I like to slice the tomatoes and place them flat on top of the salad for a pretty presentation.
Add the avocado slices and sliced or chopped hard-boiled eggs.
Sprinkle with crumbled bacon, feta chees and Parmesan cheese.
Top with your favorite dressing and serve.
