Faux-tisserie Sticky Chicken

Similar to my original Sticky Chicken recipe, this chicken is made in the Instant Pot.

Ingredients
  

  • 1 whole chicken
  • 2 stalks celery
  • 1/2 large onion cut into quarters
  • 3 garlic cloves
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1 tsp. white pepper
  • 1/2 tsp. thyme
  • 1 tsp. onion powder
  • 1 tsp. cayenne pepper
  • 2 tsp. paprika
  • 4 tsp. salt

Instructions
 

  • Prepare the sticky chicken rub.
  • Sprinkle the chicken generously all over the chicken and rub it into the skin. Lift the skin and sprinkle under the skin if possible.
  • Sprinkle the rub mixture inside the cavity and rub it in.
  • Stuff the whole chicken with celery chunks, onion quarters and garlic cloves.
  • Place the chicken in the instant pot.
  • Set the Instant Pot to high pressure for 25 minutes.
  • Let the Instant Pot vent by natural release for 10 minutes.
  • Remove the chicken and allow to rest for 5 minutes.
  • Carve and serve.
