Instant Pot Faux-tisserie Sticky Chicken

I have several versions of my popular Sticky Chicken recipe. Of course, the original version is roasted low and slow in the oven. On a side note, smoking the chicken in a smoker is a sub-recipe of the original version. A quicker version is the Sticky Chicken Tenders. Today, I am introducing yet another version, the Instant Pot Fauxtisserie Sticky Chicken, simply a twist on the original version. Still, it is more gratifying because it cooks in a fraction of the time but has the same great flavor.

1 whole chicken

2 stalks celery

1/2 large onion, cut into quarters

3 garlic cloves

Rub Ingredients:

1/2 tsp. black pepper

1/2 tsp. garlic powder

1 tsp. white pepper

1/2 tsp. thyme

1 tsp. onion powder

1 tsp. cayenne pepper

2 tsp. paprika

4 tsp. salt

Prepare the sticky chicken rub.

Sprinkle the chicken generously all over the chicken and rub it into the skin. Lift the skin and sprinkle under the skin if possible. Sprinkle the rub mixture inside the cavity and rub it in.

Stuff the whole chicken with celery chunks, onion quarters and whole garlic cloves.

Place the chicken in the instant pot. Set the Instant Pot to high pressure for 25 minutes. Let the Instant Pot vent by natural release for 10 minutes.

When the chicken is done, vent the Instant Pot until all the steam has stopped coming from the top. Remove the chicken and allow to rest for 5 minutes. Carve and serve.

Instructions

  • Stuff the whole chicken with celery chunks, onion quarters and garlic cloves.
  • Place the chicken in the instant pot.
  • Set the Instant Pot to high pressure for 25 minutes.
  • Let the Instant Pot vent by natural release for 10 minutes.
  • Remove the chicken and allow to rest for 5 minutes.
  • Carve and serve.
