Greek Grilled Chicken Salad

Even though this recipe includes a lot of ingredients, you may have most of the items in your pantry. Preparation includes a flavorful marinade that is made the day before. This savory salad is good for lunch or dinner. The tangy marinade boasts the flavors of the Mediterranean all in one bowl.

  • 2 Small bowls
  • 1 resealable bag
  • Indoor or outdoor grill

Ingredients
  

  • For the Greek Dressing:
  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. red wine vinegar
  • 5 tsp. garlic, minced
  • 2 tsp. oregano
  • 1 tsp. Swerve granular or regular sugar
  • Salt and pepper to taste
  • 1 large lemon, juiced
  • 1 cup Greek yogurt
  • 5 Tbsp. buttermilk
  • For the Marinade:
  • 2 tsp. oregano
  • 2 tsp. basil
  • 1 tsp. thyme
  • 1 tsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. 1 tsp. salt
  • 1/2 tsp. pepper
  • For the Salad:
  • 1-1/2 lb. chicken tenders
  • 1 bag Spring mix salad blend
  • 1 pkg. crumbled feta cheese
  • 1/2 red onion, thinly sliced
  • 1/2 cucumber, sliced
  • 1/2 pkg. cherry or grape tomatoes, cut in half
  • 1 avocado, sliced
  • 1 green pepper, sliced or chopped
  • Black olives

Instructions
 

  • In a bowl, combine the ingredients for the marinade and whisk until combined.
  • In a resealable bag, combine the marinade and chicken and seal the bag. Marinate overnight.
  • When ready to prepare the salad, remove the chicken from the refrigerator and grill until the internal temperature reaches 140 degrees.
  • Remove the chicken from the grill and allow it to rest for 5 minutes.
  • Slice the chicken breast.
  • To build the salad, combine the salad ingredients in a bowl. Top with the chicken and drizzle with the dressing.
