Greek Grilled Chicken Salad
Even though this recipe includes a lot of ingredients, you may have most of the items in your pantry. Preparation includes a flavorful marinade that is made the day before. This savory salad is good for lunch or dinner. The tangy marinade boasts the flavors of the Mediterranean all in one bowl.

- For the Greek Dressing:
- 2 Tbsp. extra virgin olive oil
- 2 Tbsp. red wine vinegar
- 5 tsp. garlic, minced
- 2 tsp. oregano
- 1 tsp. Swerve granular or regular sugar
- Salt and pepper to taste
- 1 large lemon, juiced
- 1 cup Greek yogurt
- 5 Tbsp. buttermilk
- For the Marinade:
- 2 tsp. oregano
- 2 tsp. basil
- 1 tsp. thyme
- 1 tsp. paprika
- 1 tsp. garlic powder
- 1 tsp. 1 tsp. salt
- 1/2 tsp. pepper
- For the Salad:
- 1-1/2 lb. chicken tenders
- 1 bag Spring mix salad blend
- 1 pkg. crumbled feta cheese
- 1/2 red onion, thinly sliced
- 1/2 cucumber, sliced
- 1/2 pkg. cherry or grape tomatoes, cut in half
- 1 avocado, sliced
- 1 green pepper, sliced or chopped
- Black olives
In a bowl, combine the ingredients for the marinade and whisk until combined.
In a resealable bag, combine the marinade and chicken and seal the bag. Marinate overnight.
When ready to prepare the salad, remove the chicken from the refrigerator and grill until the internal temperature reaches 140 degrees.
Remove the chicken from the grill and allow it to rest for 5 minutes.
Slice the chicken breast.
To build the salad, combine the salad ingredients in a bowl. Top with the chicken and drizzle with the dressing.
