Greek Tacos

- 2 Tbsp. extra virgin olive oil
- 1/2 red or yellow onion, chopped
- 1/2 red pepper
- 2 tsp. Greek seasoning
- 2 lbs. ground beef or lamb
- 1/2 tsp. thyme
- 4 garlic cloves
- 1 8-oz can tomato sauce
- 1/2 cup Chicken broth
- 1/2 tsp. oregano
- 1/2 tsp. coriander
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 cup fresh parsley, chopped fine
- 1/3 cup lemon juice
- 4 tsp. lemon zest
- Low carb tortillas
- Cucumber and tomato relish
- 1/2 cup crumbled feta
- 1-1/2 cup tzatziki sauce
In a skillet, saute the onions and red pepper in olive oil.
Add the beef and scook until no longer pink..
Drain the fat.
Add the garlic and stir.
Stir in the tomato sauce, broth, oregano, thyme, coriander, Greek seasoning, salt and pepper. Stir to combine.
Bring the mixture to a boil. Reduce the heat and simmer for about 6 minutes until the sauce reduces.
Add the parsley and stir.
Stir in the lemon juice and zest.
Serve in a tortilla topped with crumbled feta cheese, cucumber and tomato relish and tzatziki sauce.
