Greek Tacos

Feta cheese, Greek seasonings and Tzatziki sauce give these tacos a different twist. The cucumber and tomato relish add freshness and crunch. Most of the ingredients This is a quick meal to serve on a weeknight or any night that will guarantee a repeat request!

  • 1 citrus juicer
  • 1 Skillet pan

Ingredients
  

  • 2 Tbsp. extra virgin olive oil
  • 1/2 red or yellow onion, chopped
  • 1/2 red pepper
  • 2 tsp. Greek seasoning
  • 2 lbs. ground beef or lamb
  • 1/2 tsp. thyme
  • 4 garlic cloves
  • 1 8-oz can tomato sauce
  • 1/2 cup Chicken broth
  • 1/2 tsp. oregano
  • 1/2 tsp. coriander
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup fresh parsley, chopped fine
  • 1/3 cup lemon juice
  • 4 tsp. lemon zest
  • Low carb tortillas
  • Cucumber and tomato relish
  • 1/2 cup crumbled feta
  • 1-1/2 cup tzatziki sauce

Instructions
 

  • In a skillet, saute the onions and red pepper in olive oil.
  • Add the beef and scook until no longer pink..
  • Drain the fat.
  • Add the garlic and stir.
  • Stir in the tomato sauce, broth, oregano, thyme, coriander, Greek seasoning, salt and pepper. Stir to combine.
  • Bring the mixture to a boil. Reduce the heat and simmer for about 6 minutes until the sauce reduces.
  • Add the parsley and stir.
  • Stir in the lemon juice and zest.
  • Serve in a tortilla topped with crumbled feta cheese, cucumber and tomato relish and tzatziki sauce.
