Is it a gyro or is it a taco? I guess it could be either because these Greek tacos have all the wonderful flavors of a gyro but in the form of a taco. The tzatziki sauce, tomatoes, fresh cucumbers, feta and chopped mint add all the flavor you will need for this quick weeknight entree. Taco Tuesday will never be the same after you try these!
Ingredients
2 Tbsp. extra virgin olive oil
1/2 red or yellow onion, chopped
1/2 red pepper, chopped or sliced
2 lbs. ground beef or lamb
2 tsp. Greek seasoning
1/2 tsp. thyme
4 garlic cloves
1 8-oz. can tomato sauce
1/2 cup chicken broth
1/2 tsp. oregano
!/2 tsp coriander
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup fresh parsley, chopped fine
1/3 cup lemon juice
4 tsp. lemon zest
Low carb tortillas
Cucumber and tomato relish
1/2 cup feta
1-1/2 cup tzatziki sauce
Instructions
In a skillet, saute the onions and red pepper in olive oil.
Add the beef and cook until no longer pink. Drain the fat.
Add the garlic and cook and stir.
Stir in the tomato sauce, broth, oregano, thyme, coriander, Greek seasoning, salt and pepper. Stir to combine.
Bring the mixture to a boil. Reduce the heat and simmer for about 6 minutes until the sauce reduces.
Add the parsley and stir.
Stir in the lemon juice and zest.
To make the cucumber relish, combine the chopped cucumber and chopped tomato in a bowl. Stir in fresh chopped parsley. Drizzle with olive oil and sprinkle with salt and pepper. Mix well.
Serve in a warmed tortilla topped with crumbled feta cheese, cucumber and tomato relish and tzatziki sauce.
