Ingredients
  

  • 4 haddock or tilapia filets
  • 1 tomato chopped
  • 2 oranges segmented and chopped
  • 2 Tbsp. extra virgin olive oil
  • Lemon wedges for garnish
  • 1 red onion chopped
  • 1/4 tsp. red pepper flakes
  • 2 tsp. ground coriander
  • 1/4 cup lime juice
  • 3/4 tsp. salt
  • Pepper to taste
  • 1 lime sliced
  • 1/4 cup cilantro chopped fine
  • 2 tsp. cumin
  • 1 tsp. orange zest

Instructions
 

  • Preheat the oven to 400 degrees.
  • Make the salsa by adding the tomato, oranges, red pepper flakes, spices, orange zest, olive oil, salt and pepper to a bowl.
  • Saute the fennel and red onion for 5-6 minutes in a skillet.
  • Stir into the orange mixture.
  • Drizzle with olive oil and stir to combine.
  • Place the fish on a baking sheet.
  • Spoon the orange mixture over the fish, then top with lime slices.
  • Bake for 20 minutes.
  • Serve with extra lemon wedges to squeeze over the top.
