I feel like I have sunk into a fish-fixing rut! I have not served fish filets for a very long time because I was tired of how I usually prepare them. Fish always makes for a quick meal and this recipe comes together quickly. The fresh orange flavor pairs well with the fish and looks pretty on the plate. This recipe may be what I needed to kick up my fish recipe game!
Ingredients
4 haddock or tilapia filets
1 tomato, chopped
2 oranges, segmented and chopped
2 Tbsp. extra virgin olive oil
Lemon wedges for garnish
1 red onion, chopped
1/4 tsp. red pepper flakes
2 tsp. ground coriander
1/4 cup lime juice
3/4 tsp. salt
Pepper to taste
1 lime, sliced
1/4 cup cilantro, chopped fine
2 tsp. cumin
1 tsp. orange zest
Instructions
Preheat the oven to 400 degrees. In a bowl, make the salsa by adding the tomato, oranges, red pepper flakes, spices, orange zest, olive oil, salt and pepper.
In a skillet, saute the fennel and red onion for 5-6 minutes.
Add to the orange mixture. Drizzle with olive oil and stir to combine.
Place the fish on a baking sheet. Spoon the orange mixture over the fish, then top with lime slices.
Bake for 20 minutes. Serve with extra lemon wedges to squeeze over the top.
