Italian Spinach is a simple to prepare side dish with fresh spinach, garlic, onions, mushrooms and Parmesan cheese. It pairs well with any meat and is a wonderful way to serve spinach.
Saute the garlic, red onion and mushrooms in olive oil.
Add the fresh spinach to the pan and allow to wilt.
Add salt and pepper to taste.
In a small bowl, whisk the balsamic vinegar, eggs and Parmesan cheese.
Pour the egg mixture into the pan and stir to combine.
Cook for 5 - 10 minutes.
To serve, sprinkle with additional parmesan cheese.
