Italian Spinach dresses up any meal with its colorful presentation and fresh flavors. A decent amount of fresh spinach is needed to yield enough for a side dish. Serve this healthy side dish with any main dish.
Ingredients
1/4 cup extra virgin olive oil
2 tsp. minced garlic
1 small red onion, chopped
1 package fresh mushrooms, sliced
2 Tbsp. balsamic vinegar
1/8 tsp. red pepper flakes
1 bag fresh spinach
2 eggs
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
Saute the garlic, red onion and mushrooms in olive oil.
Add the fresh spinach to the pan and allow to wilt. Add salt and pepper to taste.
In a small bowl, whisk the balsamic vinegar, eggs and Parmesan cheese.
Pour the egg mixture into the pan and stir to combine.
Cook for 5 – 10 minutes. To serve, sprinkle with additional parmesan cheese.
