Place the halved and seeded jalapenos on a baking sheet.
Rub with olive oil.
Roast in the oven at 400 degrees until they are soft.
Remove them from the oven and dice after they have cooled a little bit.
In a bowl, combine the bacon, mozzarella, pepper jack cheese, cream cheese and jalapeno. Mix well.
Add the garlic, salt, lemon pepper, chili powder, paprika and pepper to the bowl. Mix well.
Add the beef and mix well.
Shape the beef mixture into 8 thin patties.
Spoon the bacon mixture onto the center of 4 of the patties.
Top with the remaining patties and press the edges to seal.
Grill the patties covered over medium heat for 6-7 minutes on each side.
Top with cheddar jack cheese and allow to melt for 2 minutes. You can cover the burgers to help the cheese to melt.
In the meantime, grill the buns until toasted.
Serve the burgers on the toasted buns and top with guacamole, lettuce, tomatoes and any other toppings you might like.
