Keto Blueberry Crisp

- 5 cups blueberries
- 3 Tbsp. Keto cake mix
- 2 Tbsp. granulated Swerve
- 1/4 cup cornstarch
- Pinch of salt
- 1 lemon juiced
- Topping:
- 1/4 cup butter softened
- 1/2 cup brown sugar Swerve
- 1 cup Keto cake mix
- 1/2 cup sliced almonds chopped
- 1/4 tsp. cinnamon
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 3/4 cups chopped pecans
- Keto ice cream or Keto TruWhip for serving
Preheat oven to 375 degrees.
In a bowl, toss the blueberries with three tablespoons of Keto cake mix, cornstarch, two tablespoons of granulated Swerve and a pinch of salt.
In a separate bowl, the remaining Keto cake mix, chopped sliced almonds, brown sugar Swerve, cinnamon, and nutmeg.
Mix in butter until crumbly.
Add blueberries to a dish sprayed with cooking spray.
Squeeze the lemon juice over the top and stir.
Sprinkle the topping mixture over the top of the blueberries.
Bake for 40 minutes.
Remove from the oven and sprinkle the pecans over the top.
Bake 10 more minutes.
Serve with Keto ice cream or a spoonful of Keto TruWhip topping.
