  • 1 casserole dish
  • 1 medium spoon
  • 1 knife

Ingredients
  

  • 5 cups blueberries
  • 3 Tbsp. Keto cake mix
  • 2 Tbsp. granulated Swerve
  • 1/4 cup cornstarch
  • Pinch of salt
  • 1 lemon juiced
  • Topping:
  • 1/4 cup butter softened
  • 1/2 cup brown sugar Swerve
  • 1 cup Keto cake mix
  • 1/2 cup sliced almonds chopped
  • 1/4 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. nutmeg
  • 3/4 cups chopped pecans
  • Keto ice cream or Keto TruWhip for serving

Instructions
 

  • Preheat oven to 375 degrees.
  • In a bowl, toss the blueberries with three tablespoons of Keto cake mix, cornstarch, two tablespoons of granulated Swerve and a pinch of salt.
  • In a separate bowl, the remaining Keto cake mix, chopped sliced almonds, brown sugar Swerve, cinnamon, and nutmeg.
  • Mix in butter until crumbly.
  • Add blueberries to a dish sprayed with cooking spray.
  • Squeeze the lemon juice over the top and stir.
  • Sprinkle the topping mixture over the top of the blueberries.
  • Bake for 40 minutes.
  • Remove from the oven and sprinkle the pecans over the top.
  • Bake 10 more minutes.
  • Serve with Keto ice cream or a spoonful of Keto TruWhip topping.
