Sweet Sensation: Keto Blueberry Crisp

Enjoy my Keto Blueberry Crisp, which is easy to make and delicious! The great thing about this recipe is that you can use any fruit with the same results. To keep it Keto/Low-Carb, I have used strawberries, raspberries, blackberries are a berry mix, so it is different every time I make it. You won’t have any leftovers with this dessert!

5 cups blueberries

3 Tbsp. Keto cake mix

2 Tbsp. granulated Swerve

1/4 cup cornstarch

Pinch of salt

1 lemon, juiced

Topping:

1/4 cup butter, softened

1/2 cup brown sugar Swerve

1 cup Keto cake mix

1/2 cup sliced almonds, chopped

1/4 tsp. cinnamon

1/2 tsp. salt

1/4 tsp. nutmeg

3/4 cups chopped pecans

Keto ice cream or Keto TruWhip for serving

Preheat oven to 375 degrees. In a bowl, toss the blueberries with three tablespoons of Keto cake mix, cornstarch, two tablespoons of granulated Swerve and a pinch of salt.

In a separate bowl, the remaining Keto cake mix, chopped sliced almonds, brown sugar Swerve, cinnamon, and nutmeg.

Mix in butter until crumbly.

Add blueberries to a dish sprayed with cooking spray.

Squeeze the lemon juice over the top and stir.

Sprinkle the topping mixture over the top of the blueberries.

Bake for 40 minutes.

Remove from the oven and sprinkle the pecans over the top. Bake 10 more minutes. Serve with Keto ice cream or a spoonful of Keto TruWhip topping. You will want to eat this every day!
