Keto Blueberry Salsa
Here is a fruit-based salsa made with blueberries. Th mild blueberries balance out the spicy vegetables for a dip that is full on flavor.

- 2 cups blueberries, roughly chopped
- 1 cup whole blueberries
- 1/4 cup lemon juice
- 3 Tbsp. cilantro, chopped fine
- 2 jalapenos, minced
- 1/2 cup red bell pepper, chopped fine
- 1 large tomato, chopped
- 1/2 tsp. salt
- 1/4 cup onion, chopped fine
- Almond flour or regular tortilla chips, Nut Thins, Low carb pita chips, or butternut squash chips for serving
Combine the chopped blueberries, whole blueberries and lemon juice in a bowl. Toss.
Add the cilantro, jalapeno, red bell pepper, tomatoes and onion. Give it a good stir to mix.
Add the salt and stir. Serve with tortilla chips, Nut Thins, Low Carb pita chips, or butternut squash chips. YUM!
