Ingredients

2 cups blueberries, roughly chopped

1 cup whole blueberries

1/4 cup lemon juice

3 Tbsp. cilantro, chopped fine

2 jalapenos, minced

1/2 cup red bell pepper, chopped fine

1 large tomato, chopped

1/2 tsp. salt

1/4 cup onion, chopped fine

Tortilla chips, Nut Thins, low-carb pita chips, or butternut squash chips for serving

Instructions

Combine the chopped blueberries, whole blueberries and lemon juice in a bowl. Toss.

Add the cilantro, jalapeno, red bell pepper, tomatoes and onion. Give it a good stir to mix.

Add the salt and stir. Serve with tortilla chips, Nut Thins, Low Carb pita chips, or butternut squash chips. YUM!
