In a mug, melt the butter in the microwave.
Add the baking powder to the mug. Do not mix yet.
Add the milk and coconut oil. Do not mix yet.
Add the almond flour and coconut flour to the mug. Give it a stir until combined. Make sure to scrape the batter off the sides of the cup and level off the top.
Microwave for 1 minute and 30 seconds. Insert a toothpick in the center to check for doneness. If it comes out clean, it is done. If it does not come out clean, microwave for 10 more seconds and check again.
Turn out the muffin onto a paper towel to allow it to cool.
Using a bread knife or a knife with a jagged edge, slice the muffin in half or in thirds through the width, not the top.
Place each slice in a toaster until browned or fry the muffin in some butter in a frying pan
Eat these plain with a little bit of butter or use them in other recipes requiring English muffins.
