Keto English Muffins in a Mug

These Keto English Muffins are made in a mug in the microwave. They are made with only a few ingredients and have a very similar taste and texture to regular English muffins without costing a fortune. After they are toasted, you can use them for all sorts of things.

Ingredients

1 Tbsp. butter

1 large egg, beaten

Pinch of salt

1 Tbsp. coconut flour

4 Tbsp. almond flour

1/2 tsp. coconut oil

2 Tbsp. milk

1/2 tsp. baking powder

Instructions

In a mug, melt the butter in the microwave.

Add the baking powder to the mug. Add the milk and coconut oil Do not mix yet.

Add the almond flour and coconut flour to the mug. Give it a stir until combined. Make sure to scrape the batter off the sides of the cup and level off the top.

Microwave for 1 minute 30 seconds. Insert a toothpick in the center to check for doneness. If it comes out clean, it is done. If it does not come out clean, microwave for 10 more seconds and check again.

Turn out the muffin onto a paper towel to allow it to cool.

Using a bread knife or a knife with a jagged edge, slice the muffin in half or in thirds through the width, not the top.

Place each slice in a toaster until browned or fry the muffin in some butter in a frying pan. I’ve tried both ways and each way turns out great.

You can eat these plain with a little bit of butter or use them in other recipes requiring English muffins.

Keto English Muffins in a Mug

Toasted English Muffins with some butter are so good as an alternative to toast for breakfast. A coffee c mug is a tool for forming these crunchy muffins. If you want a larger muffin, use a bigger coffee cup. These are great for breakfast sandwiches or on their own.
