Keto Jerk Chicken Sliders
Flavor! Flavor! Flavor! These sliders need very little to accompany them. Use your favorite toppings or simply top with a spoonful of coleslaw. No condiments needed.

1 measuring cup
1 grill or grill pan
- 3 lbs. boneless chicken thighs
- Keto dinner rolls or slider buns
- Toppings: shredded lettuce, tomato slices, pickled jalapenos
- For the Marinade:
- 1/2 cup vinegar
- 2 jalapeno peppers, minced
- 1 red onion, roughly chopped
- 4 green onions, green part only, chopped
- 2 Tbsp. brown sugar
- 1 Tbsp. jerk seasoning
In a bowl, whisk together all the ingredients for the marinade. Pour into a resealable bag. Place the bag into another resealable bag to prevent leaks.
Poke holes in the chicken using a marinating tool, knife or fork to allow the marinade to get into the flesh of the meat.
Add the chicken to the marinade and massage it a little. Marinate overnight.
Wrap the rolls or buns in some aluminum foil to warm them in the oven.
When ready to grill, coat the grill with some cooking spray or oil. Grill the chicken until the internal temperature reaches 140 degrees. Remove and keep warm.

Build your burger by placing a piece of the chicken on a warm roll and top with the toppings.
