Equipment

  • aluminum foil
  • 1 knife
  • 1 Small bowl
  • Measuring spoons
  • 1 whisk
  • 2 Resealable bags
  • 1 measuring cup
  • 1 grill or grill pan

Ingredients

  • 3 lbs. boneless chicken thighs
  • Keto dinner rolls or slider buns
  • Toppings: shredded lettuce, tomato slices, pickled jalapenos
  • For the Marinade:
  • 1/2 cup vinegar
  • 2 jalapeno peppers, minced
  • 1 red onion, roughly chopped
  • 4 green onions, green part only, chopped
  • 2 Tbsp. brown sugar
  • 1 Tbsp. jerk seasoning

Instructions

  • In a bowl, whisk together all the ingredients for the marinade. Pour into a resealable bag. Place the bag into another resealable bag to prevent leaks.
  • Poke holes in the chicken using a marinating tool, knife or fork to allow the marinade to get into the flesh of the meat.
  • Add the chicken to the marinade and massage it a little. Marinate overnight.
  • Wrap the rolls or buns in some aluminum foil to warm them in the oven.
  • When ready to grill, coat the grill with some cooking spray or oil. Grill the chicken until the internal temperature reaches 140 degrees. Remove and keep warm.
  • Prepare any toppings that you want on your sliders. I suggest my Keto Coleslaw!
  • Build your burger by placing a piece of the chicken on a warm roll and top with the toppings.
