Sliders are a party favorite! The subtle spicy flavor elevates the slider patties to the next level. They are easy to make and fun to eat. Make the patties ahead of time to make this delicious meal easier. The patties can also be stored in the freezer to use on a night when dinner threatens a take-out run.
Ingredients
For the Marinade:
1/2 cup vinegar
2 jalapeno peppers, minced
1 red onion, roughly chopped
4 green onions, green part only, chopped
2 Tbsp. brown sugar
1 Tbsp. jerk seasoning
3 lbs. boneless chicken thighs
Keto dinner rolls or slider buns
Toppings: shredded lettuce, tomato slices, pickled jalapenos
Instructions
In a bowl, whisk together all the ingredients for the marinade. Pour into a resealable bag. Place the bag into another resealable bag to prevent leaks. Add the chicken and massage it a little. I like to poke holes in the chicken using a marinating tool to allow the marinade to get into the flesh of the meat. Marinate overnight.
Wrap the rolls or buns in some aluminum foil to warm them in the oven.
When ready to grill, coat the grill with some cooking spray or oil. Grill the chicken until the internal temperature reaches 140 degrees. Remove and keep warm.
Prepare any toppings that you want on your sliders. I suggest my Keto Coleslaw!
Place a piece of chicken on the slider roll and top with the prepared toppings. You may have to cut the chicken into pieces to fit onto the slider. You can include one cut of chicken or stack multiple pieces of chicken. It depends on how hungry you are. In this case, I say more is better!
