  • 1 citrus zester
  • 1 citrus juicer
  • 2 saucepans
  • 1 Large spoon
  • 1 whisk
  • 1 measuring cup
  • Measuring spoons

Ingredients
  

  • 1 cup boiling water
  • 3/4 cup Swerve granular
  • 1 Tbsp. lemon zest
  • 2 eggs
  • 1 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1/2 cup fresh lemon juice
  • 1 tsp. orange juice
  • 2 Tbsp. butter

Instructions
 

  • Boil water and zest the lemon.
  • Combine the Swerve, cornstarch, salt and eggs in a saucepan, .
  • Stir until mixed well.
  • Add the boiling water.
  • Whisk until smooth.
  • Continue stirring until thick.
  • Stir in the lemon zest, lemon juice and orange juice.
  • Whisk in the butter until melted.
  • Continue stirring until the sauce has thickened.
  • Serve over cake, ice cream, fruit, scones or pancakes.
