Ingredients
1 cup boiling water
3/4 cup Swerve granular
1 Tbsp. lemon zest
2 eggs
1 Tbsp. cornstarch
1/4 tsp. salt
1/2 cup fresh lemon juice
1 Tsp. orange juice
2 Tbsp. butter
Instructions
Boil water and zest the lemon.


In a saucepan, combine the Swerve, cornstarch, salt and eggs. Stir until mixed well.

Add the boiling water. Whisk until smooth. Continue stirring until thick. Stir in the lemon zest, lemon juice and orange juice.

Whisk in the butter until melted. Continue stirring until the sauce has thickened.

Serve over cake, ice cream, fruit, scones or pancakes. Try it over my Keto Lemon Ricotta Cake. Delicious!
