- 1 cup sugar-free peanut butter
- 1/4 cup granulated Swerve more to taste
- 1 egg
- 2/3 cup almond flour
- 1 tsp. vanilla
- 1 Tbsp. milk or half-and-half
- 1/8 tsp. salt
- 1/8 tsp. baking soda
In the bowl of a mixer, combine the peanut butter, Swerve, egg, vanilla and milk or half and half.
Mix well.
In a separate bowl, whisk together the almond flour, salt and baking soda.
Gradually mix the dry ingredients in the mixing bowl.
Spray a cookie sheet with cooking spray or line with parchment paper.
Roll teaspoon-sized balls of the cookie dough and place a couple of inches apart on the cookie sheet.
Bake at 350 degrees for 10-12 minutes.
Remove and cool for 5 minutes, then transfer to a wire rack to cool completely.
