Keto Old-Fashion Peanut Butter Cookies

I love peanut butter! Did you know that most peanut butter has sugar in it? I am so glad that some brands are making peanut butter without sugar in it now, like Skippy. Their no-sugar peanut butter is really good, and I can’t tell the difference. If you like peanut butter with a little sweetness, add a little monk fruit or other sweetener. These Keto Old-Fashioned Peanut Butter Cookies are delightfully peanutty and chewy.

1 cup sugar-free peanut butter

1/4 cup granulated Swerve (more to taste)

1 egg

2/3 cup almond flour

1 tsp. vanilla

1 Tbsp. milk or half-and-half

1/8 tsp. salt

1/8 tsp. baking soda

In the bowl of a mixer, combine the peanut butter, Swerve, egg, vanilla and milk or half and half. Mix well.

In a separate bowl, whisk together the almond flour, salt and baking soda.

Gradually mix the dry ingredients in the mixing bowl.

Spray a cookie sheet with cooking spray or line with parchment paper.

Roll teaspoon-sized balls of the cookie dough and place a couple of inches apart on the cookie sheet.

Bake at 350 degrees for 10-12 minutes. Remove and cool for 5 minutes, then transfer to a wire rack to cool completely.
