These Keto Old-Fashioned Peanut Butter Cookies capture all the nostalgic flavor you crave, with a perfectly chewy texture and rich, peanutty goodness, without the sugar crash.
Ingredients
1 cup sugar-free peanut butter
1/4 cup granulated Swerve (more to taste)
1 egg
2/3 cup almond flour
1 tsp. vanilla
1 Tbsp. milk or half-and-half
1/8 tsp. salt
1/8 tsp. baking soda
Instructions
In the bowl of a mixer, combine the peanut butter, Swerve, egg, vanilla and milk or half and half. Mix well.


In a separate bowl, whisk together the almond flour, salt and baking soda.

Gradually mix the dry ingredients in the mixing bowl.

Spray a cookie sheet with cooking spray or line it with parchment paper.

Roll teaspoon-sized balls of the cookie dough and place a couple of inches apart on the cookie sheet.

Bake at 350 degrees for 10-12 minutes. Remove and cool for 5 minutes, then transfer to a wire rack to cool completely.
