Equipment

  • 1 small spoon
  • 1 skillet
  • 1 flat spatula

Ingredients
  

  • 6 sliced Keto bread seeded (if possible)
  • 1/2 lb. corned beef sliced
  • 6 slices Swiss cheese
  • 1/2 cup sauerkraut drained
  • 1/4 cup Russian dressing homemade with your favorite sweetener
  • 1/2 tsp. extra virgin olive oil
  • 2 Tbp. butter

Instructions
 

  • Place the corned beef slices on one slice of bread. Use as much as you like.
  • Top with Swiss cheese slices and the sauerkraut.
  • Drizzle with Russian dressing.
  • Close up your sandwich with the other slice of bread. Repeat for as many sandwiches you are making.
  • Heat the olive oil and butter in a skillet.
  • Fry the sandwiches on both sides until golden brown and the cheese is melty.
  • Serve with a side of Keto coleslaw for a satisfying lunch or dinner.
