There’s just something magical about a Reuben Sandwich—it’s the only way I truly enjoy sauerkraut. On its own, sauerkraut has never been my thing, but paired with tender corned beef, melted cheese, and a perfectly grilled Keto crust, it becomes irresistible. The sharp, tangy bite of sauerkraut blends beautifully with the savory beef and creamy cheese, creating a flavor combination that’s bold, comforting, and downright unforgettable.
Ingredients
6 sliced Keto bread, seeded (if possible)
1/2 lb. corned beef, sliced
6 slices Swiss cheese
1/2 cup sauerkraut, drained
1/4 cup Russian dressing (homemade with your favorite sweetener)
1/2 tsp. extra virgin olive oil
2 Tbp. butter
Instructions
Place the corned beef slices on one slice of bread. Use as much as you like. Traditionally, a Reuben Sandwich is made with a Pumpernickel Rye bread, which is delicious. If you want to keep this Keto, though, you must use a Keto bread. I am lucky to have a grocery store that sells a seeded Keto bread that is delicious. Top with Swiss cheese slices and the sauerkraut.

Drizzle with Russian dressing. Close up your sandwich with the other slice of bread. Repeat for however many sandwiches you are making.

Heat the olive oil and butter in a skillet. Fry the sandwiches on both sides until golden brown and the cheese is melty.

Serve with a side of Keto coleslaw for a satisfying lunch or dinner.
