Leftover Eggplant Casserole
Make extra fried eggplant one night to make Eggplant Parmesan the next night. It's a good way to use up leftovers with the added benefit of being delicious.

- Leftover fried eggplant (to make fried eggplant fresh, click here)
- 2 jars spaghetti sauce or make your own
- 2-3 cups mozzarella cheese, shredded
- A lot of grated Parmesan
Spray the baking pan with cooking spray.
Place a small amount of jarred spaghetti sauce on the bottom of the dish. If you have any leftover homemade sauce, you can use that.
Place a layer of fried eggplant on top of the sauce.
Generously spoon another layer of sauce on top of the fried eggplant.
Top with mozzarella cheese and grated parmesan.
Repeat the layering, ending with Parmesan cheese.
Cover and bake at 350 degrees for 30 minutes.
Remove the cover and bake for another 10-15 minutes.
