I always make extra fried eggplant when I plan that on my menu plan. Click here for my Keto Fried Eggplant recipe. What can you do with all that extra eggplant? Well, Eggplant Parmesan, of course! Eggplant Parmesan is a good way to use any Fried Eggplant leftovers. I always make a very small 8×8 pan of Eggplant Parmesan because it is so rich. Added in that nowadays when I make it Keto, a little goes a long way. Even as rich as it is, Eggplant Parmesan is delicious!
Ingredients
Leftover fried eggplant, (to make fried eggplant fresh, click here)
2 jars spaghetti sauce, or make your own
2-3 cups mozzarella cheese
A lot of grated Parmesan
Instructions
I usually make fried Eggplant using round slices, but this time I got a bee in my bonnet to make planks. Eggplant Parmesan works no matter how you slice it, but I will make rounds for future endeavors. Fried Eggplant is perfect for leftover Eggplant Parmesan the next day. I like to plan ahead and make extra. You can make fried eggplant using flour or almond flour.
Eggplant Parmesan is rich, so I always make it in a small 8 x 8-inch baking dish. Place a small amount of jarred spaghetti sauce on the bottom of the dish. If you have any leftover homemade sauce, you can use that. Use what you have on hand.
Place a layer of fried eggplant on top of the sauce. Spoon another layer of sauce on top of the fried eggplant. Be generous with this layer.
Top with mozzarella cheese and grated parmesan.
Repeat the layering, ending with Parmesan cheese.
Cover and bake in the oven for 30 minutes. After 30 minutes, remove the cover and bake for another 10-15 minutes.

- Cooking Spray
- 1 medium spoon

- Spray the baking pan with cooking spray.
- Place a small amount of jarred spaghetti sauce on the bottom of the dish. If you have any leftover homemade sauce, you can use that.
- Place a layer of fried eggplant on top of the sauce.
- Generously spoon another layer of sauce on top of the fried eggplant.
- Top with mozzarella cheese and grated parmesan.
- Repeat the layering, ending with Parmesan cheese.
- Cover and bake at 350 degrees for 30 minutes.
- Remove the cover and bake for another 10-15 minutes.
