Quick Artichoke Salad

This dump-and-go salad has lots of fresh flavors and textures. It is a good choice for a picnic or potluck because there is no refrigeration required. The pesto dressing gives this Italian salad the perfect touch without a lot of fuss.

Equipment

  • 1 serving bowl
  • 1 colander
  • 1 Large spoon

Ingredients
  

  • 2 jars artichoke hearts, drained
  • 1 can black olives, drained
  • 1 small red onion, chopped
  • 1 cup sun-dried tomatoes, sliced and drained
  • 1 small container eta cheese, crumbled
  • 1 jar pesto sauce
  • Salt and pepper to taste

Instructions
 

  • Drain the artichokes and add to a serving bowl.
  • Add the olives and sun-dried tomatoes.
  • Add the red onion.
  • Stir in the salt, pepper and pesto sauce.
  • Mix well and garnish with feta cheese over the top to serve.
