Quick Artichoke Salad
This dump-and-go salad has lots of fresh flavors and textures. It is a good choice for a picnic or potluck because there is no refrigeration required. The pesto dressing gives this Italian salad the perfect touch without a lot of fuss.

1 colander
1 Large spoon
- 2 jars artichoke hearts, drained
- 1 can black olives, drained
- 1 small red onion, chopped
- 1 cup sun-dried tomatoes, sliced and drained
- 1 small container eta cheese, crumbled
- 1 jar pesto sauce
- Salt and pepper to taste
Drain the artichokes and add to a serving bowl.
Add the olives and sun-dried tomatoes.
Add the red onion.
Stir in the salt, pepper and pesto sauce.
Mix well and garnish with feta cheese over the top to serve.
