Seafood Salad

This salad is very similar to tuna salad but without the tuna. A mixture of flounder, shrimp and crab elevatess thie ordinary to extraordinary.

Ingredients
  

  • 1 red onion, chopped
  • 1/4 cup dill pickle relish
  • 1 lb. cooked shrimp, peeled, deveined and chopped
  • 1/2 lb. crab flakes, fresh or canned
  • 1 lb. flounder, cooked and chopped
  • 1 tsp. extra virgin olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup mayonnaise
  • 1 tsp. Old Bay Seasoning, plus more to sprinkle on top
  • 2 celery ribs, chopped

Instructions
 

  • Soak all the fish in milk for about 30 minutes to eliminate any fishy odor. Rinse and drain well.
  • Combine all the seafood, red onion, and celery In a medium bowl. Toss.
  • In a small bowl, combine the mayonnaise, olive oil, salt, pepper, pickle relish and Old Bay seasoning. Mix until combined and smooth.
  • Pour the dressing over the seafood and mix to combine well.
  • Serve in a pretty dish on top of some greens or place a scoop of the salad on a bun to have as a sandwich.
  • Drizzle some more of the dressing on top.
