Seafood Salad
This salad is very similar to tuna salad but without the tuna. A mixture of flounder, shrimp and crab elevatess thie ordinary to extraordinary.

- 1 red onion, chopped
- 1/4 cup dill pickle relish
- 1 lb. cooked shrimp, peeled, deveined and chopped
- 1/2 lb. crab flakes, fresh or canned
- 1 lb. flounder, cooked and chopped
- 1 tsp. extra virgin olive oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup mayonnaise
- 1 tsp. Old Bay Seasoning, plus more to sprinkle on top
- 2 celery ribs, chopped
Soak all the fish in milk for about 30 minutes to eliminate any fishy odor. Rinse and drain well.
Combine all the seafood, red onion, and celery In a medium bowl. Toss.
In a small bowl, combine the mayonnaise, olive oil, salt, pepper, pickle relish and Old Bay seasoning. Mix until combined and smooth.
Pour the dressing over the seafood and mix to combine well.
Serve in a pretty dish on top of some greens or place a scoop of the salad on a bun to have as a sandwich.
Drizzle some more of the dressing on top.
