Sliced Cucumbers with Herbs and Garlic
Cucumbers dressed with a few herbs and garlic are an easy replacement for salad. Cucumbers are mostly water, but provide a source for Vitamin A and Vitamin K. All that water will keep you hydrated.

- 1-2 large cucumbers
- Extra virgin olive oil for drizzling
- 1/2 tsp. fresh chives, minced
- 1/2 tsp. fresh parsley, minced
- 1/2 tsp fresh basil, minced
- Salt and pepper
Peel the cucumbers and cut them into rounds or sticks.
Place the cucumbers in a bowl and drizzle with olive oil.
Sprinkle the cucumbers with chopped fresh herbs.
Toss. and serve.
