Crunchy cucumbers are the star of the show for a fresh snack or side dish. Cucumbers are high in vitamins, minerals and antioxidants. Some say cucumbers help with weight loss and lowers blood sugar. I like to serve cucumbers sometimes in place of a salad with my main meal for a little something different.
Ingredients
1-2 large cucumbers
Extra virgin olive oil for drizzling
1-2 tsp. garlic, minced
1/2 tsp. fresh chives, minced
1/2 tsp. fresh parsley, minced
1/2 tsp. fresh basil, minced
Salt and pepper
Instructions
Peel the cucumbers and cut them into rounds or sticks. Sometimes I leave the peel on the cucumber; they are loaded with fiber and minerals.

Place the cucumbers in a bowl and drizzle with olive oil.

Sprinkle the cucumbers with chopped fresh herbs and garlic. Toss.

This is a wonderful side dish in place of a salad or it is a nice snack.

Sliced Cucumbers with Herbs and Garlic
Equipment
- 1 knife
- 1 cutting board
- 1 bowl
Ingredients
