Smoked Salmon Omelet

The smoky flavor of the salmon really comes through in this omelet. The fresh herbs, feta cheese and smoked salmon make a delicious filling for an omelet.

Ingredients
  

  • 2 eggs
  • 2 Tbsp. heavy cream
  • 1 oz. cream cheese softened
  • 1 tsp. sour cream
  • 1 Tbsp. fresh herbs minced (dill, parsley,
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. water
  • 2 tbsp. butter
  • 2 Tbsp. feta cheese crumbled
  • 2 slices smoked salmon chopped
  • Garnish: Chopped Chives lemon wedge

Instructions
 

  • In a bowl, crack the eggs and whisk until fluffy.
  • Add the cream, cream cheese, fresh herbs, sour cream, salt, pepper, and water.
  • Whisk until all ingredients are combined.
  • Melt the butter in a frying pan until it is slightly sizzling,
  • Add the egg mixture to the pan.
  • Allow to set for a couple of minutes.
  • Sprinkle the feta cheese and the smoked salmon over the top of the eggs.
  • When the eggs look firm enough on the top, use a spatula to fold in one side of the eggs to the middle.
  • Press and hold to ensure the eggs don't seep out.
  • Repeat with the other side of the omelet so that both sides meet in the middle.
