In a bowl, crack the eggs and whisk until fluffy.
Add the cream, cream cheese, fresh herbs, sour cream, salt, pepper, and water.
Whisk until all ingredients are combined.
Melt the butter in a frying pan until it is slightly sizzling,
Add the egg mixture to the pan.
Allow to set for a couple of minutes.
Sprinkle the feta cheese and the smoked salmon over the top of the eggs.
When the eggs look firm enough on the top, use a spatula to fold in one side of the eggs to the middle.
Press and hold to ensure the eggs don't seep out.
Repeat with the other side of the omelet so that both sides meet in the middle.
